WINEMAKING
Harvested from both, the Okanagan and the Similkameen Valleys, the grapes were loosely crushed prior to undergo a long and slow primary fermentation due to cold ambient temperatures. Daily pump overs were perfomed for good extraction of flavours and tannins, plus full malolactic fermentation. Aged 24 months in (30%) French and (70%) American oak barrels; 10% new French oak barrels to add complexity without overpowering fruit expression.
FLAVOUR PROFILE
Deep garnet colour with a lovely bouquet of black currant and dark plum fruit, mingling with spice box, smoke, and oak. This Cabernet Merlot is a full-bodied wine with soft drying tannins and good structure. Flavours of black cherry, black currant, oak, and spice fill the mouth. The extra-dry lingering finish shows notes of black tea, cocoa powder, black currant, blackberry, spicy oak, and smoke.

Enjoy with beef tenderloin; grilled red meats; pot roast; aged Cheddar; Grana Padano cheese.
