Sandhill Cabernet Franc Icewine 2017

WINEMAKING
Harvested from Terry Grewal Vineyard at Covert Family Farms in the Okanagan Valley during the early morning hours of December 24, 2017 with a brix reading of 41.4°, at an average temperature of -10°C. The frozen grapes were then pressed, releasing the smallest amount of pure extract from each precious grape. This luxuriously rich juice was then cool fermented and aged in stainless steel to enhance fruit characteristics.
FLAVOUR PROFILE
This rare Cabernet Franc Icewine has a bright cherry red colour and enticing aromas of wild strawberry, red currant jelly, rhubarb and watermelon. This perfectly sweet Icewine is balanced by bracing acidity. Luscious flavours of red cherry, cranberry and raspberry fill the mouth, followed by notes of strawberry, rhubarb, pomegranate and sweet spice lingering exquisitely on the finish.
SERVING SUGGESTIONS
Serve as an aperitif before a glorious meal or sip as an after-dinner drink, as you would a fine liqueur. Enjoy with black olive tapenade and rich pâtés or try with fruit-based desserts which may include fruits such as strawberry, cherry, rhubarb, raspberry, Saskatoon berry, blackberry, currant or blue plum.
